What’s the big deal about Seasonal eating?

There is this beautiful natural rhythms of bounty, followed by the next wave of something coming into peak ripeness.

That peak is noted by flavor, color, scent and sometimes sweetness!

Telling your senses that it’s at it is peak nutritional value.

Nobody wants a sour, hard underripe blackberry.

However, a fully ripe deep dark blackberry smells divine, tastes like a flavor bomb went off in your mouth, and your body thanks you for the fresh delivery of antioxidants.

Vegetables, Meats and Fruits all have a peak season.

We farm with the seasons, aiming to maximize the nutrient density of each food we produce.

Its why we only Pasture Raise our chickens & pork in the spring and summer, ensuring they have the highest levels of vitamin D (derived from sunshine), and carotenoids from the grass they eat.

Its also why we choose lovely winter squashes, they sweeten in storage, and trap all of that sunshine into nourishing vitamins just waiting to be consumed!
